wow...most off record post in history... I have a mere opinion to offer, I agree that the middle seat belt does look like crap.
And no, I won't ever have 5 people in my car, so removing it is a possibility.
No, don't even think about reply with "What if you DID?"
Because I won't....don't beleive me? nobody cares, I'm not trying to get out of wearing no seatbelt, deal with it.
Guess that was my rant for the day, answer the question/agree with a comment or don't reply at all, arguing something like this post's question is best saved for the special olympics.

ok ill start off by saying this is a pita to do in case you were wondering and the best way to do it would be to remove the c pillars first but its very possible to do without it (since you wont need to remove the deck to get to the belt)

after removing the headrests you will need to "bend" the deck so you can lift it
About the bonded thing the middle belt and the pass buckle both have ring terminals on them and use a single bolt... so instead of leaving them completely seperate they are connected using what i want to say is a type of glue.

I have the same problem, but im making it a 2 seater
What exactly is there below the rear deck and how do you go about removing the belt in a way it can be installed again?

its just a few botls and it comes right out...you need to pull out the deck cover...in order to do that you need to cut some slits onto it so that it slides out from the seat belts...then just pull it out...and you will have access to the seatbelt
