If you are looking for new, why not just go into a dealership and ask them to find you what you want? I looked around online and didn't see anything at the dealerships in my city, so I went in to talk to one and they brought a car in for me from the other side of the country. Took a couple weeks, but it got here, and I got exactly what I wanted.
That might be easier than what you're doing. I know from experience that, 2 weeks ago anyway, there were a TON of 07 SS coupes in winnipeg available without a sunroof. There might still be some of them kickin around.
